With some help from Arnie Tex on Youtube I finally dialed in proper mexican rice.
My first time making Frijoles Charros too.
I marinated some chicken breasts for 24 hours in Pollo Asado marinade smoked em for an hour then 400 for 30 minutes.
Forgot to take a photo, but came out delish. I made my potatoes with jalapeños, onion and garlic too.

Dinner Sun night -
Scallops with Bacon Onion Jam on Couscous with a carrot puree. Dessert was coffee creme brulee.



Breakfast was so late on Monday that I want with lunch at a Bagel spot that was on point!

They have Muffaletta!
I had one in New Orleans and that is probably the best sandwich I've ever had and it seems they are not easy to find.

I haven't liked black olives (and a majority of olives in general) since I was a kid, so it isn't just because of your pick lolol! Funny thing is that I love a good olive oil.
