With some help from Arnie Tex on Youtube I finally dialed in proper mexican rice.
My first time making Frijoles Charros too.
I marinated some chicken breasts for 24 hours in Pollo Asado marinade smoked em for an hour then 400 for 30 minutes.
Forgot to take a photo, but came out delish. I made my potatoes with jalapeños, onion and garlic too.

Dinner Sun night -
Scallops with Bacon Onion Jam on Couscous with a carrot puree. Dessert was coffee creme brulee.
