Not exciting, but smoking some ribs for dinner. Hard to get the smoke maze going, so lit it on all four ends. Lasted about two hours. Should still be good. Cold as fuck in Texas 26* for the high for the past two days. Cold front from colorado came through.

Woke up at 5:30 this morning to start smoking a 7.5# pork butt. No brining, but seasoned last night ( dry brining) using Adkins pork and chicken rub last night before bed. Up to 145* as of 11:45am.
Phone camera took a dump so no pics.
Just imagine a pork butt in a pellet smoker surrounded by smoke, and you get the idea...

I,ate,so much Spam as a kid growing up, I just can't convince myself to eat any more of it. i was born with a plastic spoon in my mouth. That's before the Spork was invented.

The Spam was pretty good, but definitely not worth the effort to smoke. Being pre cooked, I could only smoke it for two hours before it started to burn. The smoke is there, but almost in am artificial way, like liquid smoke. Fried Spam is still the king, IMO
