They add things like glycerin, sweeteners, oak extract, and caramel color for batch-to-batch consistency and to simulate aging.
There was a movement to make this public knowledge and for makers to promote additive free tequila but the Mexican agency that regulate tequila forbade it. I'm sure that had nothing to do with all of the big money that the mass market brands bring...
